Filleted red mullet on sautéed and glazed vegetables is a sea dish that you can savour at the La Scala Restaurant of Cagliari.

Ingredients

  • Red mullet – 1 kg
  • Baby carrots – 100 g
  • Baby purple potatoes – 100 g
  • Beetroot – 100 g
  • Fish broth – 500 ml
  • Salt and pepper – to taste
  • Thyme
  • Lemon

Preparation

Fillet the fish and remove all bones, then cook briefly in a pan with a drop of oil and salt; wash and peel the vegetables and scald them in a pot. Then sauté them gently in a pan with olive oil and a clove of garlic and place with the mullet.
